Healthy, oil free salad dressing that is also wonderful on roasted vegetables. If you are afraid of making your own salad dressings, this is a easy and tasty way of adding some zing to your salads and vegetables.

Ingredients:

  • 2 Tablespoons Ground flaxseed or ground chia seeds
  • 1/4 cup water
  • 1/2 cup Fresh squeezed orange juice (blood oranges were used for the photo)
  • 1 Tablespoon Maple syrup (substitute honey if not vegan)
  • 1 Tablespoon Dijon style mustard
  • 1/4 cup White wine vinegar (substitute apple cider vinegar or rice vinegar)
  • 1 teaspoon Orange zest (zest from one fresh orange)
  • 1 pinch salt (or to taste)
Optional Additions:
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon granulated onion (1/8 teaspoon if using onion powder)

Special Equipment:

  • Blender or stick blender (optional)

    Preparation Method:

    Putting it together:

    In a medium or large bowl, combine the ground flaxseed or chia seed with the water and whisk to combine. Let the mixture rest for 10 minutes to hydrate. If using a blender, add to a blender jar and pulse to blend.

    Add the remaining ingredients and whisk or blend to combine. Use immediately or place the dressing in a sealed container in the refrigerator for up to 7 days.
