Pumpkin is not just for pie. This quick and easy version of oatmeal adds the antioxidant benefits of pumpkin and pomegranate.

 

Ingredients:

  • 1/3 cup old fashioned rolled oats
  • 2/3 cup water or non-dairy milk
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon ground flaxseed
  • 1/4 cup pomegranate seeds (substitute your favorite berry)
  • 1/2 cup non-dairy milk

Special Equipment:

No special equipment is required.

 

Preparation Method:

Add the oatmeal, water, and spices to a microwave safe bowl and stir. Heat on high in a microwave for 90 seconds, remove and stir. Heat for another 30 seconds.

Remove from the microwave and stir in the ground flaxseeds.

Let sit for one minute, then top with pomegranate seeds and non-dairy milk
