Fantastically flavorful and healthy oil-free dressing that goes well with any salad, fruit, and it is great on sweet potatoes! This is the dressing I use for my Mushroom Sprout Avocado crepes .

  • 2 Tablespoons Warm water
  • 1 Tablespoon Chia Seeds
  • 1/4 cup Rice vinegar (regular, not "seasoned" rice vinegar)
  • 1 Tablespoon Maple syrup (Optional)
  • 1 teaspoon Fresh ginger - finely minced
  • 1 Tablespoon Sweet yellow onion - finely minced
  • 1 large Orange

Notes:

Note: The difference between "Seasoned" rice vinegar and regular rice vinegar is the addition of salt and sugar to the "seasoned" variety. I recommend always using regular rice vinegar to help you control the level of salt and sugar in your recipes.

You do not need to blend the dressing, it will thicken naturally from the chia seeds, but I recommend blending the dressing because it thickens immediately and you will get more nutrition (Omega-3 fatty acids) from the chia seeds if they are blended.

Method:

Begin the by soaking the chia seeds in 2 tablespoons of water while preparing the remaining ingredients for the dressing.

Use a garlic press or knife to finely mince the ginger and onion and place in a small bowl with the rice vinegar and honey. Use a microplane or fine grater to zest the orange and place the zest into the bowl with the ginger and onions. Slice the orange in half and squeeze the juice into the bowl.

Once the chia seeds have become thick, add the chia seeds to the dressing bowl and whisk to combine the dressing ingredients. Refrigerate the dressing for 1 hour before using; the chia will thicken the dressing. Keep the dressing refrigerated for up to 1 week in a sealed container.

Optionally, you can use a blender to blend the dressing and it will thicken much faster. If you are using a blender, you can also peel and blend the entire orange rather than using just the juice. Blending the orange into the dressing provides more fiber in your meal and helps to thicken the dressing.
