If you want to make a quick pizza, whole grain tortillas work great for a thin and crispy crust. This Thai inspired pizza is easy to assemble and the flavors are incredible, give it a try!

Ingredients:

  • 2 large whole grain tortillas 10 or 12 inches
  • 1/4 cup Thai peanut sauce (store bought or homemade) Easy homemade peanut sauce recipe
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots (or thinly sliced)
  • 1/2 cup thinly sliced cucumber
  • 1/2 cyo diced red or yellow bell pepper
  • 1 jalapeno pepper, thinly sliced (substitute shishito pepper or your favorite spicy pepper)
  • 4 cremini mushrooms or white button mushrooms

Garnish:

  • 2 Tablespoons chopped cilantro
  • 2 Tablespoons chopped Thai basil (substitute regular basil)
  • 2 Tablespoons green onion, thinly sliced
  • 1/2 cup bean sprouts (mung or soy bean sprouts)
  • 1/4 cup crushed peanuts (unsalted or lightly salted)

Special Equipment:

No special equipment is required.

 

Preparation Method:

Preheat the oven to 400° F.

If not already done, thinly slice the cabbage, carrots, cucumber, peppers, mushrooms and the garnishes of your choice.

Lay the tortillas on a sheet pan or cookie sheet. Spread 1 to 2 tablespoons of peanut sauce on each tortilla. Evenly divide and spread the cabbage, carrots, cucumber, mushrooms, and peppers among the two pizzas. The key to a great pizza is not to overload it with toppings.

Place the pizzas in the oven on the middle rack and bake for 10 minutes. Remove from the oven and garnish the pizzas with the cilantro, basil, green onion, sprouts and peanuts. Add more peanut sauce if desired, or a few drops of sriracha or similar hot sauce. Slice each pizza into four pieces using a knife or pizza cutter and serve.
