Miso Ginger Dressing

With a touch of orange, ginger, and sesame, this makes a great salad dressing or a great sauce to top cold noodle salad, vegetables, or your favorite plant-based burger.

Ingredients:
- 2 Tablespoons White or yellow miso
- 1/4 cup Rice Vinegar (plain, not seasoned)
- 1/4 cup Orange juice (Fresh squeezed)
- 1 Tablespoon Minced ginger (fresh)
- 1 small garlic clove
- 2 Tablespoons Toasted sesame oil
- 1/4 cup Raw cashews Soaked in water for 30 minutes or more
- 1 Tablespoon ground flaxseed
- 1/3 cup water
- 2 teaspoons sesame seeds (toasted preferred)
- 1 whole Green onion / Scallion, thinly sliced (white and green parts)

Preparation Method:
Add the miso, rice vinegar, orange juice, ginger, garlic, sesame oil, cashews, flaxseed, and water to a blender and blend on high until the cashews are fully broken down and the mixture is smooth.
Pour the dressing into a container and stir in the sesame seeds and sliced green onion. Use immediately or cover and refrigerate for up to one week.
